Saturday was a very special day, my best friends bridal shower. I was very fortunate that her boss and coworker who are very close friends to her decided they wanted to take over the planning for this. They did a wonderful job hosting and made for a very memorable day. I’m so honored to have such an amazing best friend and to be a part of this precious time in her life.
Part of my duties for the shower was to bring some snacks. I wanted to keep some healthy options that were dairy free as the bride-to-be has a milk allergy. I started off by ordering two dozen custom decorated vegan cupcakes from the talented Sarah Thomas of Cuppitycakes Cupcakery in Innisfail. I gave her the freedom to choose the flavors and decorate it to fit the theme which was ‘Naughty Knickers’. She did an amazing job, they were gorgeous, delicious and a huge hit with everyone! 1 can (15oz) Chick Peas
1/2 cup sesame seeds
1 clove garlic
3 tbsp lemon juice
1 tsp salt
Throw in blender until smooth
I also made a roasted red pepper hummus, the recipe is the same as above but with the pepper. To roast, cut pepper in half and remove seeds. Place under the broiler until the outside starts to char. Remove from the oven and put in a sealed ziplock bag for a few minutes. This will loosen the skin so you can remove it. Throw that in with the rest of the ingredients and blend. So good!
